Gravi-Flux is the ideal solution for breaking dough with up to 90% hydration and long fermentation such as ciabatta. Its patented weight control system and no-stress technology for working the dough without compressing it guarantee an unrivaled final result.

Stress-free process

The lamination allows to obtain a continuous slice of stress-free dough. The No-Stress technology ensures that the dough is never compressed throughout the whole process.
